|2 1/2||scoops||cinnamon or vanilla flavored protein powder||*I recommend MRM Cinnamon Bun protein*|
|1/2||cup||baking stevia||or sweetener of choice|
|1||tsp||Cream of Tartar|
|1||tbsp||melted coconut oil|
- Preheat over to 350 F. Combine all dry ingredients in a bowl. In another bowl, mix together the pumpkin puree, coconut oil, egg white and vanilla extract. Stir dry ingredients into the pumpkin mixture.
- On a greased cookie sheet, place spoonfuls of cookie dough to make 18 cookies, spaced about 2 inches apart. Use a large spoon to flatten the cookie dough a bit. Sprinkle the cookies with cinnamon.
- Bake for 8-10 minutes or until lightly golden brown.
