Quantity Unit Ingredient Notes
2 1/2  scoops cinnamon or vanilla flavored protein powder *I recommend MRM Cinnamon Bun protein*
1 cup coconut flour
1/2 cup baking stevia  or sweetener of choice
1 tsp Cream of Tartar
1/2 tsp baking soda
1/2 tsp cinnamon
pinch of nutmeg
1/2 cup canned pumpkin
1 tbsp melted coconut oil
1 egg white
1 tsp vanilla extract


  1. Preheat over to 350 F.  Combine all dry ingredients in a bowl.  In another bowl, mix together the pumpkin puree, coconut oil, egg white and vanilla extract.  Stir dry ingredients into the pumpkin mixture.
  2. On a greased cookie sheet, place spoonfuls of cookie dough to make 18 cookies, spaced about 2 inches apart.  Use a large spoon to flatten the cookie dough a bit.  Sprinkle the cookies with cinnamon.
  3. Bake for 8-10 minutes or until lightly golden brown.
